Who doesn't love a little trash talk before a big football game. However, insulting another man's food maybe a step too far for some especially in Texas. When it comes to iconic food in our state, BBQ is always near the top. However, Kansas City is home to some of the best BBQ in the country as well. So who does it better?
What is Kansas City Style BBQ?
It is seasoned with a dry rub, slow-smoked over a variety of woods and served with a thick tomato-based barbecue sauce. It can use pork, beef, chicken, turkey, lamb, sausage, and sometimes even fish if you can believe it.

What is Texas BBQ?
Well the thing with Texas that anyone from Kansas City reading this needs to know. It's kind of a big state and each region of Texas has their own unique BBQ style.
- East Texas style—the meat is slowly cooked to the point that it is "falling off the bone." It is typically cooked over hickory wood and marinated in a sweet, tomato-based sauce.
- Central Texas style—the meat is typically rubbed with only salt and black pepper (though some restaurants have been known to use other spices), then cooked over indirect heat from a pecan, post oak, or mesquite wood fire. Sauce is typically considered unnecessary, but it may be served on the side to complement the meat.
- West Texas style—the meat is cooked over direct heat from mesquite wood in a method very similar to grilling.
- South Texas style—the meat is marinated in thick, molasses-like sauces that keep the meat moist after cooking.
Here's the thing with all the BBQ types listed above. In Texas, you need to know how to do three things properly. Beef brisket, pork ribs, and sausage.
