Looks like a pickle festival was looking for some interesting pickle recipes and it turns out someone in Wichita Falls won in TWO different categories.

When I try to find stories to talk about, this is right up my alley. Apparently this weekend in Wayne County, North Carolina it is their annual pickle festival. Mt. Olive Pickles are actually made in Mount Olive, North Carolina. They give out free pickles at this festival, carnival rides, and plenty of stuff for the whole family to do. They also have a pickle recipe contest and someone from Wichita Falls won in two different categories.

Best Pickle Winner from Wichita Falls (Dill & Cherry Kool-Pickle Swirled Slushes)

The Wayne County government put up a video of Fay Moreland's recipe from right here in Wichita Falls. They even give our city a shout out...well they tried to pronounce our town right. For those interested in the recipe, here are the ingredients and instructions below. 

  • Ingredients (Serves 3)
  • 2 24 ounce jars Kosher Dill Spears with Sea Salt divided**
  • 1/2 cup granulated sugar**
  • 1 0.13 ounce packet cherry** flavored drink mix unsweetened
  • 1 12 ounce container frozen lemonade-
  • frozen 6 cups ice - divided
  • 1 Lemon
  • Toothpicks
  • 3 16 ounce cups *

The cherry kool-pickles have to be made 7 days ahead of time*

*Take one jar of the pickles & drain out the juice to a bowl, add the sugar to the juice & stir until it melts, stir in the packet of cherry flavor drink mix & pour this mixture back into the pickles, put the lid on & shake then store in the refrigerator until ready to use*

Place the frozen lemonade concentrate, 4 cups of the ice, 4 of the Kosher Dill Pickle spears & a 1/2 cup of the Pickle Juice from the jar into a blender. Blend, using the frozen drink setting, until thick & slushy. Pour a little more than half into a large cup & put in the refrigerator until needed. Add the remaining 2 cups of ice to the blender, along with 4 of the cherry flavored pickle spears & a 1/4 cup of the cherry pickle juice. Blend again until thick & slushy. Line up the cups your using & pour both slushes at the same time into each cup, one from the right side & one from the left, this creates the swirl of the 2 flavors. Cut a cherry & regular pickle into chunks & slice the lemon, use the toothpicks to add the pickle chunks on the top of the drinks & place the lemon slices on the cup edges.

Best Pickle Winner Entree (Sweet & Spicy Pickled, Peppered Pork BBQ Pizza)

Not only did Faye win in the beverage category, she also won in the entree category. Here are the ingredients and instructions for her pickle pizza recipe.

  • Ingredients (Serves 4)
  • 1 Ball Fresh Pizza Dough - at room temperature
  • 1 Cup Tomato Pizza Sauce - your favorite
  • 2 Cups Shredded Mozzarella - divided 1/2 Cup
  • Chopped Smoky BBQ Bread & Butter Chips -patted dry & 2 Tablespoons Of The Pickle Juice - reserved until needed
  • 1 Red Hot Link - leftovers work great, thinly sliced
  • 4 Slices Hickory Thick Sliced Cooked Bacon - chopped into 1 inch pieces
  • 3 or 4 BBQ Baby Back Ribs‐ leftovers work great, remove bones & chopped into 1 inch pieces
  • 12 Candied Jalapeño Slices- chopped & patted dry
  • 2 Tablespoons Of The Pepper Juice - reserved until needed
  • 1 Red Onion Ring Slice- thinly sliced & rings separated
  • 1/4 Cup Sweet & Spicy BBQ Sauce - your favorite

Directions

Preheat oven to 475 degrees and place the rack in the top third of the oven. Place your dough ball on a 12-inch pizza pan and, using your hands, spread the dough from the middle outward to cover the pan. Spread the sauce in the center of the dough, then work it outward, leaving a 1-inch edge free of toppings for the crust. Evenly cover the sauce with 1 1/2 cups of cheese, then add the chopped pickle. Place the hot link, bacon, and rib meat on next, followed by the candied jalapeño, the remaining cheese, and the red onion rings. Bake for 15 to 18 minutes, until the cheese is melted and the crust is crisp and golden. While the pizza is baking, whisk together the BBQ sauce and reserved pickle and pepper juices. Drizzle this mixture over the pizza when it comes out of the oven. Slice and enjoy.

According to the Pickle Festival website, Fay from right here in Wichita Falls will win a year's supply of Mt. Olive Pickles. Hopefully she gets two years worth since she won in two separate categories.
